Whirlwind

I'm sorry I have been gone for so long... 

my life has been a whole lot of chemistry, and a whole lot of flu :( 

I wish this wasn't the case - but my blogging took a major hit, which makes me sad, but I do what I can. 

So here are some tidbits of my Valentine's Day date with Javi at Cilantro (so old, right?).

Cilantro has a special place in my heart; it is where Javi and I went on our first date :)

And today, I am stepping out of my seclusion and I am pampering myself with a trip to the hair salon & spa. Because it's just so necessary after the way the last two weeks have been!

Not Valentine's Day

You all probably think I am nuts, but due to my hectic schedule the last few days, and Javier's, we have decided we are celebrating Valentine's Day officially tomorrow, so we have time to go on a real date. 

The big kid world is so romantic. 

But I am really looking forward to it, and {hopefully} there will be {some decent} pictures!

I am obsessed 

Leather + Fur

I have my first Organic Chemistry exam coming up this Monday...

I may be MIA for a few days... I'm going to die. 

On the cheery side of things, this is one of my favorite outfits - I love pleather leggings and I love my fur vest :) And my Madden wedges of course! Comfy yet stylish; my specialty. 

There is something about these leggings that I must share. I had great pleather leggings from Express, and I knelt down on the bathroom rug to give my kidden a bath. It rubbed the pleather off of the knees, ruining my leggings. I went to the mall to find some more and no one had them; then someone said try Body Central. To put it kindly, I really don't like that store. But I was desperate and they had one pair left, in my size, for $5. Win for me! So for now, until I come up with some serious cash, these will do :)

Speaking of serious cash, say some prayers for me guys. I have to take a series of tests for this job I applied for and if I pass them, I get my first job where I will be paid, significantly, over minimum wage. I will be making about twice what I made at my last job - which would be beyond absolutely fantastic.

Yum In My Tum

I discovered these little munches on Pinterest and decided I wanted to try to make them myself!

Best idea I've ever had.

I made these with Hilary, and again for the Superbowl, and all I did was eat these all day. They are light, fresh and savory all at the same time. The cucumber is crunchy and sweet and the filling adds a salty, seasoning-rich taste. I'm in love. I honestly think I am going to start making these on a regular basis, they would be a great snack anytime!

And you won't regret eating 500 of these...

Ok maybe 500 is a bit much, but you get my point.

Cucumber Feta Rolls

Filling:

6 Ounces of crumbled original feta cheese

3 Tablespoons of plain Greek yogurt

3 Tablespoons finely chopped sun dried tomatoes

1 Tablespoon chopped fresh basil

2 Teaspoons lemon juice

Add some dashes of...

Pepper

Pepper flakes

Oregano

4-5 Cucumbers

(I think it is safe to have more than less - it is difficult to cut the cucumber thinly without butchering many slices!)

The filling before it was all mixed up

Slice the cucumber in thin strips length wise

Put about a small amount of filling at the end of the cucumber strip and roll them up!
End result: delicious, healthy and satisfying hors d'oeuvres

OU was a blast - it was a great weekend. I'll have (a few) pictures and more about it coming soon! Between Blogger Friday and the trip to OU I've had so much fun, but I am so exhausted! My internal clock is so beyond messed up! Anybody else have the problem where once you have one night off of your normal schedule, you mess up your sleeping patterns for a while? I know I do! Tidbits

This weekend is going to be epic; I can feel it.

Today I am going to my friend Hilary's, the writer of Young and Naïve.

We are doing a "Blogger Friday" afternoon with recipes, outfits and more! 

So be prepared for some exiting posts coming up on Monday!

Last minute (as in late last night) Javi and I decided to make a road trip down to

 Ohio University in Athens to visit his friends, 

and I could not be more excited. 

OU is in the middle of no where, but the campus is beautiful and it is the definition of a college town. 

So be ready for lots of pictures from the trip too!

Health Kick

Tonight my friend Olivia and I went on a health kick.

We worked out and afterwards when we were hungry, we decided to make some healthy munch.

These two recipes are easy, fast, healthy and too tasty!

Fruit Smoothie

Ingredients

Ice

6-7 Tablespoons of plain yogurt

1 Cup sorbet (we used mango)

1 1/2 Cups Frozen fruit (fresh is always best, but we used frozen pineapple and raspberries)

3/4 Cup milk (we used vitamin D milk)

Throw it all in a blender! That's it! 

Naan Pizza

Ingredients

Naan bread

Olive oil

Canned pizza sauce

Oregano

Red pepper flakes

Minced garlic

Cheese (mozzarella, parmesan or both)

Turkey pepperoni 

The great thing about this recipe is you can really do this however you want - add more or less depending on your taste. And obviously, you can make just about any kind of pizza. A good healthy pizza idea would be a pizza with your favorite veggies! So to begin, spread some olive oil on the naan bread and add light sauce. Then throw on lots of cheese! Sprinkle oregano and red pepper flakes, and add small amounts of the minced garlic. Add your turkey pepperoni and sprinkle a bit more cheese (we wanted this to be very cheesy) Throw it in the oven at 400 degrees and cook until all the cheese it melted. We did not time it but it took less than 10 minutes. Enjoy! :)

Spontaneity

This time the bipolar weather of Ohio really paid off; it was in the 60's yesterday! 

My friend Lisa and I decided we wanted to do something outdoors so we could enjoy the beautiful weather. So after class we decided we were going to be adventurous and make the hour long drive up to Lake Erie to the Headlands Beach State Park. This was my first time going - and I loved it! I've been longing for a beach - and Lake Erie is so big you can't see the other side, so for now it is just going to have to do as my "ocean!"
And so, for the afternoon, I pretended I was off on a beach,
 far, far away from real life,
listening to the "ocean" waves with my bestie.
