There is one very special part of my trips to Cinci. Every time I go and have the pleasure of staying with Javier and his family, I get to learn a little more Spanish and I get introduced to more Mexican Cuisine. This time I had the pleasure of Javi making this wonderfully delicious meal. He was the master chef who put everything together; I was the assistant and photographer. Cooking is always a fun way for us to spend a little creative time together, and it was a lovely afternoon activity that produced one of my new favorite dishes. It is easy to make and easy to devour.
Start with...
The Sauce
1 Can of refried beans
1 Tomato
A smidgen of cilantro
About a quarter of an onion
1/2 to 1 Serrano pepper
Salt & Pepper to Taste
1/3 Cup water
Optional Seasonings
1 Tsp Chicken Bouillon
A few dashes of Nature's Seasons
A few dashes of Maggie Sauce
A bit of Sambal sauce to taste
Put all of these ingredients together into a blender and run it until the mixture becomes very well blended. Then throw the sauce into a pot and heat it on the stove until it is to the consistency that you prefer. Tip: It should be a smooth enough consistency to be able to spoon over the tortillas. Keep the sauce warm until the rest of the meal is prepared.
The Tortilla
4 Corn tortillas (2 per person)
Shredded chicken (lunchmeat turkey is a good substitute!)
Shredded colby-jack cheese
Olive oil
Begin heating up a frying pan with a small amount of olive oil. Tip: the pan has to be very hot before you put the tortilla on, or else the tortilla will rip. Fry the tortillas so they are slightly crunchy, but not cooked so much that they become hard. Tip: While frying the tortillas, put the meat off to the side to cook a bit. When your tortilla is ready, throw in the meat or cheese of your choice. We had the colby-jack in one, shredded chicken in another, and the last one was turkey lunch meat. After the tortilla is filled, dip it in the sauce, and top it. We topped ours with shredded colby-jack cheese, queso fresco, avocado, sour cream, and Javier's Mom's home-made poblano pepper salsa (wish I had the recipe!) Then enjoy a deliiiicious meal :)
